Abstract

The present work was carried out with the objective of elaborating a proposal of the organization and technical-administrative operation of! Institutional Food Service -SAI-, of the "San Vicente" Antituberculous Sanatorium to help improve the nutritional care provided to patients of said institution.


The preparation of the proposal consisted of several stages: diagnosis of the actual SAI proposal, preparation of the proposal, approval and presentation of the proposal. A
Through the diagnosis, the aspects that required organizational and technical changes were determined; Based on this and the bibliographical revisions, an operation manual of the objectives, functions and organization of the SAI was elaborated: by means of the systems methodology, the operation of each one of the activities that are developed in the SAI was planned, designing a total of 17 systems, each one consists of objectives, schedules, people in charge, instruments, general rules and procedures.


Through the implementation of the SAI operating proposal, the necessary rules and procedures will be established so that the activities within it are carried out in a logical and interrelated sequence, facilitating the work, making it more practical and efficient.
