Abstract

It is known that there are countless plants in the Guatemalan flora with high nutrient content, such as starch, protein, mineral salts, and vitamins. Some of these plants, whose use as food is less well known in Guatemala, are described in this work in terms of their morphological characteristics, geographic distribution, uses in certain locations, and chemical composition. Most of the plants described are completely wild, and some are cultivated only in restricted regions of the country. The plants on display, all of them edible, belong to three groups: vegetables, tubers and rhizomes, and fruits.
